Old Style Spaghetti & Meatballs
- 1# Spaghetti or Fettuccine
- 2# Ground beef. 12% or less
- 1 Cup Italian style bread crumbs
- 3 28oz cans diced Tomatoes
- 1# Fresh Mushrooms(I use Crimini)
- 1 1/2 Heads garlic (Minced)
- 1 1/2 Lrg Onions (Chopped)
- 1 1/2 Tbs Oregano (Ground)
- 1 1/2 tsp Basil (Ground)
- 2 Tbs Sugar
- 4 Tbs Butter
- Olive Oil
- Salt & Pepper
- For Marinara Sauce:
- In large sauce pot,add onions,garlic and mushrooms with just enough olive oil to coat,saute until tender & light brown.About 15 min.
- Add tomatoes, basil, Oregano & sugar,mix thourghly while bringing to a boil.Ad salt & pepper to taste,reduce to low and simmer.2 1/2 - 3 hrs. Stirring occasionlly.
- For Meatballs
- Mix Beef & Breadcrumbs & roll into balls (size to your likeing)Season if like and fry until just under done.Set aside, add to sauce for last 1/2 hr to cook in sauce flavor
- For Pasta
- In lrg pot with water and a splash of olive Oil cook pasta to desired tenderness.
- Strain,don't rinse, add butter and toss til coated.Sprinkle with salt & pepper to taste. Pile pasta on plate and laddle on sauce w/meatballs.
