Baba Ghanoush
- 1 firm eggplant sliced 1/2 inch thick
- 1/4 cup EVOO,plus more for brushing
- salt and pepper
- 1/4 cup water
- 1/4 cup tahini
- 1 clove garlic
- juice of lg lemon
- 1 teaspoon hot pepper sauce
- 1-1/2 cups lightly crushed pita chips
- One 15.5 ounce can chickpeas,rinsed
- 1 cup drained hot giardiniera chopped
- 1/2 english cucumber,cut in 2 inch cubes
- 1 small red onion,chopped
- 1/2 c flat leaf parsley
- Preheat grill or grill pan until hot. Brush eggplant slices with EVOO,grill turning once 5min,salt and pepper. Transfer to cutting board,cool,cut into chunks.
- Using food processor,puree water,tahini,garlic,lemon juice & hot sauce add remaining EVOO.
- Combine all ingredients & toss.
