Chocolate Peanut Butter Pie
- 2 cups milk
- 1/2 cup sugar
- 1 tablespoon vanilla extract
- 5 egg yolks
- 1 tablespoon butter
- 1/4 cup cornstarch
- 1 cup peanut butter
- 1/2 cup chocolate chips
- 1 chocloate graham cracker or Oreo crust
- Put the milk, vanilla and half of the sugar in a pot
- and scald (when there are a few bubbles around the
- edge of the pot.)
- Mix the other half of the sugar with the cornstarch to
- break up the cornstarch. Add the egg yolks and whisk
- together. Be sure there are no lumps.
- Once the milk has scalded, slowly pour it into the
- eggs while whisking. Pour about half of the dairy into
- the bowl.
- Pour the eggs back into the milk and return to
- the stove. Turn stove to high and stir with a rubber
- spatula or spoon.
- Once the custard begins to thicken, whisk for about
- one more minute.
- Take off the stove and add the butter, chocolate and
- peanut butter.
- Stir until these are all melted. Pour into crust.
- Refrigerate until set.
