Chard Tart
- Pastry:
- 2 cups flour
- 1/2 tsp salt
- 1/c cup water
- 1/2 cup olive oil
- Filling:
- 2 tbsp olive oil
- 1 red onion, finely chopped
- 1 lb chard leaves or other greens
- 1-2 tsp dried thyme
- 4 large eggs
- 1/3 cup heavy cream or half and half
- 1/2 cup grated parmesan
- 1 cup cottage or ricotta cheese
- 1/2 cup grated cheddar or mozzarella
- Combine dry ingredients. Stir water and oil together, Combine.
- Knead the mixture briefly. The dough will be very moist and difficult to roll.
- Press dough into 11" tart pan. Refrigerate about 1 hour or more.
- In a large skillet, over medium low heat, cook onion in olive oil for about 15 minutes.
- Add chard leaves and cook until tender, 8 - 10 minutes.
- Season with thyme, salt and pepper.
- Position rack in the lower third of the oven. Preheat to 375F.
- Combine eggs, heavy cream, parmesan and cottage cheese in a bowl.
- Add greens to mixture and turn on to prepared shell. Top with shredded cheese.
- Bake 40-45 minutes.
