Apricot Nut Loaf

  1. Preheat oven to 350u0b0.
  2. Grease a 9 x 5-inch pan.
  3. Cover apricots in lukewarm water for 30 minutes; drain.
  4. Remove zest from 1/2 orange with vegetable peeler.
  5. Cut orange in 1/2 and squeeze juices from both halves.
  6. Grind apricots, orange zest and raisins in processor.
  7. Add enough boiling water to orange juice to make 1 cup and pour into bowl with ground fruit.
  8. Stir sugar and butter; beat in eggs.
  9. In separate bowl, stir flour, baking soda, salt, baking powder and walnuts.
  10. Add to fruit.
  11. Mix with vanilla.
  12. Pour into pan and bake 55 to 60 minutes.
