White Bean And Kale Soup
- 1/2 cup olive oil
- 1 onion diced
- 1 bunch trimmed and sliced kale
- 2 cups chopped collard greens, frozen
- 4 cloves garlic mashed or grated
- 1 crushed red chili pepper
- 30 oz. canelli beans, canned drained
- 2 teaspoon dried rosemary
- 1 teaspoon fresh sage chopped
- 1 bay leaf
- 12 oz. polska kielbasa cut into rounds
- 1/2 teaspoon ground pepper
- 8 chicken broth cubes dissolved in 8 cups water.
- Saute onion and garlic in olive oil with bay leaf until clear. Add the kale and continue cooking over med heat until softened.
- Add chili, pepper, sage and rosemary and chopped collards and set heat to med-low.
- Brown kielbasa separately in a skillet.
- Add beans, chicken broth and keilbasa to pot and bring to boil and let simmer for an hour.
