Mango Jicama Salad
- 1 medium sized jicama (baseball size - yields roughly 4 cups)
- 1 medium sized mango
- 1 small red onion
- 1 small red pepper
- 1 cup bean sprout
- 1 cup cilantro (or more if you like the flavour)
- 2 TBSP Sesame Oil
- 2 TBSP Rice Wine Vinegar
- 3 TBSP Lemon Juice
- 1 tsp ground cumin
- 1 tsp hot pepper sauce
- salt, pepper to taste
- Peel and dice the jicama and mango into small pieces. Peel and dice red onion. Destem and deseed red pepper, dice. Chop bean sprouts and cilantro.
- Combine all in bowl and toss.
- For dressing:
- Whisk together sesame oil, rice wine vinegar, lemon juice, hot pepper sauce and cumin.
- Toss over combined vegetables (and mango).
- Add salt and pepper to taste.
