Giovanni'S Meatloaf
- 2# extra lean ground pork
- 2# extra lean ground beef
- 2# extra lean ground veal or turkey
- 10 cloves of garlic minced
- 1 tbsp salt
- 1 tsp ground pepper
- 1/2 cup minced parsley
- 4 eggs
- 2 cups seasoned bread crumbs (don't scrimp)
- Mix well. if dry add extra eggs
- 1-1/2 cups grated parmesan
- Sauce
- 1 head celery chopped into 1/4 inch dice
- 6 large red pepper chopped into 1/4 inch dice
- 1 large onion chopped into 1/4 inch dice
- 4 large garlic minced
- 1 tbsp salt
- 1 tsp ground black pepper
- 1 tsp ground cayenne pepper
- 1/2 cup olive oil
- 2 -28 ounce cans plum tomatoes with tomatoes squished
- 1/3 cup butter, melted 1/3 cup flour
- Mix meat well adding at the last the parmesan cheese Form into a long roll about 12 inches long. Cut into 3 equal pieces. In roasting pan place 3 or 4 stalks of celery. Place the cut pieces of meatloaf on top of celery. Cook 1/2 hour at 400 degrees to sear the outside. Lower the heat to 325 degrees and cook for 1/2 or 3/4 of an hour. until cooked through
- Sauce
- Place diced celery, peppers and onion in a large skillet. Cook over moderate heat until beginning to soften. Add cayenne pepper and olive oil. cook 2 minutes then add tomatoes with their juice. Wisk flour into melted butter until smooth. Add to skillet and stir thoroughly, to mix well.
- Cook at a simmer for 1/2 to 3/4 of an hour
- When meatloaf is done Slice into 3/4 inch slices and serve with sauce.
- Serve with a salad and foccacio bread
