Spicy Jalapeno Slaw
- 1 1/4 t toasted cumin seed, ground
- 1 1/4 t toasted coriander, ground
- 3/4 C vegetarian mayonnaise ( I like Spectrum) or regular maynnaise
- 4 shallots chopped
- 2 fresh jalapenos, chopped fine, with seeds
- 1/4 loosely packed chopped fresh cilantro
- 2T pure maple syrup
- 1 t low salt soy sauce or tamari
- 1 t dijon mustard
- 1 t cider vinegar
- 2 T fresh lime juice
- 1 t salt, or to taste
- 6 C green cabbage sliced very thin
- 3 C red cabbage, sliced very thin
- 1 medium red bell pepper, sliced very thin
- 1 yellow bell pepper, sliced very thin
- 2 small carrots, grated
- In a food processor, combine the cumin through the lime juice. Toss the cabbages, peppers and carrots together, then toss with the dressing. Adjust seasoning to taste
