Chocolate Chipotle Oatmeal Cookies (O.M.G.'S)
- 2 3/4 sticks butter, softened
- 1 1/2 c packed brown sugar
- 3 eggs
- 1 1/2 tsp vanilla
- 2 plastic-wrapped packages finely crushed graham crackers
- 1/2 c flour
- 3 c rolled oats
- 1 1/4 tsp cinnamon
- 1 tsp ground ginger
- 6 tsp chipotle powder
- 1 tsp salt
- 1 1/2 tsp baking soda
- 1/2 c sweetened shredded coconut
- 1/2 c dried cranberries
- 2/3 c broken walnuts
- 3/4 c chocolate chips
- Heat oven to 350F. Cream the sugar and butter together. Add eggs and vanilla. Blend in graham cracker crumbs until thoroughly incorporated. Mix dry spices, salt and baking soda with flour and incorporate. Add oats, and rest of ingredients. Place 3tbsp size balls on parchment paper covered cookie sheets. Flatten out middle somewhat so they cook more evenly. Cookies will spread to about 3 1/2" diameter. Bake for approximately 16-18 minutes, until just past golden brown. Under cooking them can lead to a soggyish center.
