Jumpstart Muffins
- 1 c whole wheat flour
- 1/2 c all purpose flour
- 1/3 c sugar
- 1/3 c mixed dried fruit bits
- 1/4 c chopped walnuts
- 2 Tbsps chopped pitted dates
- 1 tsp baking powder
- 1 tsp baking soda
- 1/3 c mashed ripe banana
- 3 Tbsps margarine, melted
- 1 - 8 oz carton vanilla low fat yogurt
- 1 egg
- vegetable cooking spray
- Combine first 8 ingredients in a large bowl; make a well in center.
- Combine banana and next 3 ingredients in a bowl; stir well. Add to dry ingredients, stirring just until moistened.
- Divide batter evenly among 12 muffin cups coated with cooking spray.
- Bake at 350 degs for 23 mins or until toothpick inserted in center comes out clean. Remove from pans immediately; let cool on a wire rack.
