Creamy Rice Pudding With Raisins
- 6 cups milk (you could use 1%)
- 1 cup sugar
- 3/4 cup long grain rice
- 12oz. can condensed milk
- 1 teaspoon vanilla
- 2 eggs
- 1/2 cup raisins
- In a 4 quart pot bring 4 cups of milk to a boil. Add 3/4 cup of rice to the boiling milk and simmer for 20 minutes. Mix in 2 cups of milk and 1/2 cup of sugar to the rice and simmer for another 15 minutes. While that is cooking, in a bowl beat eggs, 1/2 cup of sugar and condensed milk. Slowly mix the eggs mixture into the rice and simmer for another 10-15 minutes, stirring occasionally until rice is cooked. You'll need to taste it. While rice is simmering steam the raisins for about a minute and add them to the rice and stir. Place in casserole dish and sprinkle with cinnamon. Serve warm or chilled with a dollop of whipped cream. It's delicious! Enjoy
