Chow Chow Relish

  1. Combine the chopped vegetables.
  2. Sprinkle with salt and let stand about 6 hours.
  3. Drain.
  4. Mix vinegar, sugar and spices and simmer 10 minutes.
  5. Add vegetables.
  6. Simmer 10 minutes.
  7. Bring to a boil and pack, boiling hot, into hot, sterilized jars.
  8. Leave 1/8 inch of headspace.
  9. Adjust caps.
  10. Yields 4 pints.
