Chow Chow Relish
- 1 qt. chopped cabbage
- 3 c. chopped cauliflower
- 2 c. chopped onions
- 2 c. chopped green tomatoes
- 2 c. chopped sweet green peppers
- 1 c. chopped red peppers
- 3 Tbsp. canning salt
- 2 1/2 c. vinegar
- 1 1/2 c. sugar
- 2 tsp. dry mustard
- 1 tsp. turmeric
- 2 tsp. celery seed
- 1/2 tsp. ground ginger
- 1 tsp. mustard seed
- Combine the chopped vegetables.
- Sprinkle with salt and let stand about 6 hours.
- Drain.
- Mix vinegar, sugar and spices and simmer 10 minutes.
- Add vegetables.
- Simmer 10 minutes.
- Bring to a boil and pack, boiling hot, into hot, sterilized jars.
- Leave 1/8 inch of headspace.
- Adjust caps.
- Yields 4 pints.
