Cucumber Relish
- 1 gal. finely chopped cucumbers
- 1 qt. finely chopped onions
- 1 c. finely chopped sweet red pepper
- 1 c. finely chopped green pepper
- 1 c. finely chopped carrots
- 3 Tbsp. pickling salt
- 2 tsp. ground turmeric
- 1 tsp. celery seed
- 1 tsp. whole cloves
- 2 Tbsp. mustard seed
- 3 (2-inch) cinnamon sticks
- 3 c. vinegar
- 3 c. sugar
- Combine cucumbers, onions, peppers, carrots and salt in a large mixing bowl.
- Mix well and refrigerate at least 8 hours or overnight.
- Drain.
- Tie spices in a bag.
- Combine spice bag, vinegar and sugar in a large saucepan.
- Bring to a boil.
- Add vegetables.
- Boil gently, stirring often, 15 to 20 minutes or until desired consistency.
- Pack into hot sterilized jars, leaving 1/2-inch headspace.
- Screw metal bands on tightly.
- Process in a boiling water bath for 15 minutes.
- Yield: About 6 pints.
