Cucumber Relish

  1. Combine cucumbers, onions, peppers, carrots and salt in a large mixing bowl.
  2. Mix well and refrigerate at least 8 hours or overnight.
  3. Drain.
  4. Tie spices in a bag.
  5. Combine spice bag, vinegar and sugar in a large saucepan.
  6. Bring to a boil.
  7. Add vegetables.
  8. Boil gently, stirring often, 15 to 20 minutes or until desired consistency.
  9. Pack into hot sterilized jars, leaving 1/2-inch headspace.
  10. Screw metal bands on tightly.
  11. Process in a boiling water bath for 15 minutes.
  12. Yield: About 6 pints.
