Pan Seared Pork Tenderloin W/ Apple Bbq Sauce
- 4 8oz Pork Tenderloins cleaned
- 2-Tablespoon Coconut Oil
- Seasonings:
- 1 1/2 T Granulated Garlic
- 2 T Granulated Onion
- 1/2 tsp Cayenne pepper
- 1/4 tsp White Pepper
- 1 1/2 tsp Medium Course Sea Salt
- 1 tsp cumin
- 1 T Paprika
- Sauce:
- 1-Tablespoon Coconut Oil
- 8 oz Low sodium chicken broth or Bock Beer w/one chicken bullion cube.
- 5 oz Tomato sauce
- 2 1/2 Tbl Brown Sugar
- 3/4 cup Apple Cider Vinegar
- 1 1/2 Tablespoon Minced Garlic in water or Fresh
- 1/2 -Medium Red Onion (minced)
- 1/4 Fuji Apple finely chopped.
- 1-Tablespoon Balsamic Vinegar.
- TT Sea salt and pepper (regular salt may be used)
- Put the pork on a plate and mix all of the dry spices and mix them real well. Sprinkle the spices all over the pork and let rest for about 5 minutes. This seasoning that you have mixed up can be used to season the sauce as well or anything else you desire in future cooking. In a skillet heat the coconut oil on medium low heat. Once the oil is heated put the loin in the skillet and cook for 5 minutes on each side (rotating every 5 minutes). Set loin aside on a plate and cover lightly with plastic and continue to make the sauce.
- Sauce:
- Saute the onions in the same pan loin with a little more coconut oil. After the onions are translucent add the garlic and saute for a minute or two. Next add the Apples and saute for about 3 minute. Then crank up the heat to medium high and add the chicken broth. Cook this for 3 minutes and sir or shake pan occasionally. After the three minutes add the vinegar and brown sugar and cook for 3 more minutes. Wisk in the tomato sauce, turn heat to med low and simmer until the sauce gets the thickness that you desire (stirring every once and a while will let the moister out and the sauce will thicken). If the sauce gets too thick add more chicken stock or beer to thin it out.
- Cut the loin into 1/4 inch medallion slices (on the bias) fan out in a half moon shape on to your plate.
- Before serving the sauce add the Balsamic Vinegar to the sauce, sir and spoon the sauce over the pork.
