Country Captain
- 2 T unsalted butter & bacon fat
- Whole chicken cut up
- 2 diced C of each
- -yellow onion(1), celery(4), bell pepper(1)
- 1 chili pepper seeded/minced
- 1 t chopped garlic
- Curry powder
- -1 T ground ginger
- -2 t ground cumin
- -2 t ground cardamom
- -1/2 t ground turmeric
- -2 t paprika/Hungarian
- -2 t ground coriander
- -2 t cinnamon
- -1/4 t ground clove
- -1 pinch of cayenne pepper, dried thyme, -Colman's mustard powder
- 2 C canned chopped tomatoes
- 1 can of diced tomatoes
- 1 C chicken broth
- 2 bay leaves
- 1/2 C raisins
- -Pot big enough for single layer of chicken
- -Melt butter and bacon fat, until slightly foamy 3-5 minutes
- -Brown chicken until all pieces are golden brown and remove
- -Lower heat add onion, celery, peppers & garlic and stir well with wooden spoon.
- -Slowly add Curry powder, stir to coat everything until tender 7-10 minutes
- -Add can of tomatoes, broth & bay leaves and scrap bottom of pan and bring to a simmer
- -Add chicken & cover tightly
- -Cook over low flame for 35-45 minutes
- -Put over rice & sprinkle with raisins
- -Condiments; Toasted coconut, thin sliced scallions, peanuts, almonds, green tomato or apple chutney, pickled hot peppers or pickled okra
