Cranberry Bars
- Filling:
- 1/2 c sugar
- 1 tsp grated orange peel
- 1 tbsp cornstarch
- 1/4 c orange juice
- 1 12 ox. bag cranberries, coarsely chopped
- 1 16 oz. can jellied cranberry sauce
- Crust:
- 3 c rolled oats
- 1 c flour
- 2/3 c light brown sugar
- 1 tsp ground ginger
- 1/2 tsp salt
- 3/4 c (1 1/2 sticks) butter or margarine, at room temp cut into chunks
- In 2 qt. saucepan, combine sugar, orange peel and cornstarch. Add orange juice and stir until smooth. Stir in cranberries and cranberry sauce. Cook over med heat, stirring frequently until mixture comes to boil, about 10 min. Remove from heat and set aside to cool.
- In med mixing bowl, mix oats, flour, brown sugar, ginger and salt. With a fork, lightly work in butter or marg to make a moist, crumbly dough.
- Reserve 2 c of the oat mixture for topping. Pat remaining dough evenly over bottom of 13 x 9" baking pan. Spread cranberry filling evenly over crust. Sprinkle evenly with remaining oat mixture.
- Bake in preheated 350 oven for 30-35 min, til light golden brown. Let cool, then cut into bars.
