Chicken Braised With Red Wine And Prunes
- 1 medium frying chicken or about 4 pounds of chicken parts
- flour for dredging
- 1/4 cup plus 1 tsp EVO
- 1 large red onion, halved and sliced
- 4 -6 plum tomato, chopped with juices
- 1 small Cinnamon stick
- 5 0r 6 whole cloves
- grading of one whole nutmeg
- salt, pepper
- 20 prunes,
- 1/4 cup dry red wine
- 1/2 tsp dry mint
- Dredge chicken in flour and brown in 1/4 evo. Remove, add remaining EVO and saute onion until wilted.
- 2. Place chicken, tomatoes, cinnamon, cloves, nutmeg, salt pepper, in skillet with onion. Stir with wooden spoon once or twice over high heat. Reduce heat, ad 1/2 to 3/4 cup water, if needed, simmer covered for 25 minutes, adding more water if needed.
- 3) add prunes and red wine, keep pot half covered and simmer for 25 - 40 minutes more. Stir in mint just before serving, Take out cinnamon stick.
