Skillet Beef And Corn
- 1 lb. sirloin steak, thinly sliced
- 1 medium onion, chopped
- 1/2 tsp. thyme, crushed
- 1 Tbsp. olive oil
- 1/2 c. dry red wine
- 1 (14 oz.) can Del Monte original style stewed tomatoes (no salt added)
- 1 (17 oz.) can Del Monte whole kernel golden sweet corn (no salt added), drained
- 1 c. cooked rice
- In skillet, brown meat, onion and thyme in oil. Season with pepper, if desired.
- Stir in wine.
- Bring to a boil.
- Simmer, uncovered, over medium heat, about 7 minutes or until liquid is gone. Add tomatoes. Reduce heat.
- Cover and cook 15 minutes or until meat is tender. Uncover and cook 5 minutes more. Garnish with sliced green onions, if desired.
- Makes 4 servings. Contains 305 calories.
