Chicken Salad
- 1 small package of rice - usually 2 cups white long grain rice dry rice. 4 cups cooked rice.
- 1 small green pepper
- 1 small onion
- 2 stalks of celery
- 1 Jalapeno - without the vein and seeds if you don't want it too hot.
- 1 Can Cream of Mushroom Soup
- 1/2 C water
- dash of worchester sauce Tony Chachere's seasoning
- 1 package Hot Sausage - I use Jimmy Dean
- Cook rice until done, set aside.
- Cook sausage or ground beef, set aside.
- Cut up pepper, onion and celery and sautee in butter or oil until done, set aside.
- Mix all ingredients together in a casserole dish adding the worchester sauce, water. Season to taste with Tony Chachere's seasoning or salt and pepper.
- Bake in casserole dish at 350 degrees for half an hour.
