My Meatloaf

  1. Preheat oven to 350 (on convect) or 375 without convection.
  2. Saute onions and garlic in a little olive oil til translucent and slightly browned. Cool.
  3. Meanwhile, lightly beat the 2 eggs, add salt, pepper, Worcestershire sauce. Mix chili sauce with the tomatoes.
  4. Pour egg mixture, tomatoes and onion/garlic mixture over meat. Mix carefully to distribute evenly. Add bread crumbs and sprinkle with dried oregano; mix again, carefully, don't overwork the meat.
  5. Form into a loaf and place in greased 9x13 pan. Bake at for about 55 min, or until thermometer measures 165 degrees.
