Apple Cheesecake
- 1 2/3 C graham cracker crumbs
- 1/3 C packed lt.br. sugar
- butter or margarine
- cinnamon
- 3 medium cooking apples, cored, peeled and sliced
- sugar
- 4 eggs
- 1 - 8 oz cottage cheese
- 1 -8 oz cream cheese
- grated peel of one lemon
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup heavy or whipping cream
- Preheat Oven to 450u0b0
- Put cracker crumbs into springform pan w/ 1/3c br. sugar, 1/2c butter & 4tsp cinnamon.
- Press into pan. Keep in frig til needed.
- In a heavy skillet, glaze apple rings (3 or so min. per side, til nicely golden) in 1/4 C butter & 2 tbls sugar).
- Take about six or eight of the glazed apple rings and place on bottom of springform pan. Keep the rest on something like wax paper, so they won't stick.
- In Blender put eggs, 3/4C sugar, cottage cheese & remaining ingredients except cream.
- Blend at med. speed until smooth. Add cream, blend. Pour into springform pan. Arrange reserved apples on top. Sprinkle w/cinamon. Bake 10 minutes. Turn oven control to 300 and bake 55 minutes. Cool cake 30 minutes
