Spinach Mashed Potato Casserole

  1. -Preheat oven to 350
  2. -Lightly grease a medium casserole dish
  3. -Cook spinach according to the package directions.
  4. -Place potatoes in a pot with enogh water to cover, and bring to a boil. Cook 15 minutes or until tender but firm. Drain, cool slightly, and mash.
  5. -In a bowl, mix the spinach, mashed potatoes, butter, sour cream, onion, salt ,pepper and dill.
  6. -Transfer to the prepared casserole dish. Top with cheese.
  7. -Bake 20 minutes in preheated oven until bubbly and lightly brown
  8. NOTE- I had to bake it about 30-40 minutes
