Creole Shrimp Sausage Stew
- 2 tsp Olive Oil
- 1 cup chopped green bell peppers
- 1 cup thinly sliced turkey sausage like andouille(6oz)
- 1 tsp minced garlic
- 3/4 cup less-sodium chicken broth
- 1 (10 oz) can diced tomato and green chilies, undrained (like Rotel)
- 8oz peeled and deveined med. shrimp
- 1 (15oz) can kidney beans, rinsed and drained
- 2 Tbs chopped fresh parsley
- 1. Heat oil in a large saucepan over medium-high heat; saute bell peppers, garlic and sausage, stiring occasionally, about 3 minutes or until peppers are tender.
- 2. Add broth and tomatoes; bring to a boil.
- 3. Add shrimp and beans, cover and reduce heat ans simmer for 6 minutes or until shrimp are done.
- Sprinkle with parsley.
