Peanut Butter Oatmeal Chocolate Chip Cookies
- 3/4 cup butter
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 3/4 cup peanut butter
- 1/4 cup water
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 2 1/4 cups rolled oats
- 1 cup semisweet chocolate chips
- Possible variations: add 1 cup rice krispies, use 1/4 cup less oats, crunchy v. creamy peanut butter
- Preheat oven to 350 degrees.
- Cream together butter and sugars. Beat in eggs one at a time, then add peanut butter, water, vanilla and cinnamon. Combine flour and baking soda in a separate bowl and add to the creamed mixture. Finally, add oats and chocolate chips. Drop by teaspoonfuls onto an ungreased cookie sheet. Be careful of spacing; these cookies expand to a nice size.
- Bake for 8-10 minutes until edges are slightly browned. Remove to cool on wire racks or on wax paper.
