Mel'S Orzo Salad
- 1 - small jar Balsamic vinagrette salad dressing (I used Paul Newman's)
- 1 - small box of Orzo pasta 1 - bunch of scallions (chopped 1/4" pieces/bite size)
- 2 - cucumbers - chopped
- 1 small package grape tomatos sliced in half
- 2 cups fresh baby spinach - chopped
- 1/2 cup canned, sliced black olives
- 1/2 cup - pine nuts - toasted
- 1/2 cup feta cheese
- 1 cup sauted combined red, green, an yellow peppers
- Optional add-ins:
- 1 cup cooked diced chicken
- 1 cup fresh or canned mushrooms
- 1. Cook Orzo pasta about 10 minutes or to al dente. Drain.
- 2. Place orzo in a large serving bowl and cool with 1/4 of the bottle of
- salad dressing.
- 3. In one T. of olive oil, saute peppers for 5 minutes. oil. Add to in pasta.
- 4. Add the rest of the ingredients and chill.
