Chocolate Chip Pecan Pie
- 1/2 c. (1 stick) butter, softened
- 1/2 c. light brown sugar, well packed
- 1/2 c. white sugar
- 1 tsp. vanilla
- 2 eggs
- 3/4 c. flour
- 1 1/2 c. (12 oz.) semi-sweet chocolate chips
- 1 c. chopped pecans plus 2 Tbsp. for garnish, divided
- 1 unbaked 9-inch pie shell
- Preheat oven to 350u0b0 (325u0b0 if using glass pie plate).
- In a large mixing bowl, cream together butter, brown sugar, white sugar, vanilla and eggs until light and fluffy.
- Add flour, chocolate chips and 1 cup pecans and mix thoroughly.
- Pour mixture into unbaked pie shell and sprinkle 2 tablespoons pecans in a circle on top.
- Bake one hour or until an inserted toothpick comes out clean, about 50 minutes at lower temperature and check before letting it bake longer.
- Makes 8 servings.
