Asian Chicken Salad
- 3-4 Chicken Breasts
- 1 Package Cole Slaw Mix
- 2 Packages of Ramen Chicken Noodles
- 1 Red Pepper
- 2 Scallions Sliced
- 2 TBL Sesame Seeds
- 2 TBL Almonds
- 1 Can Sliced Water Chestnuts (optional)
- DRESSING:
- 1 1/2 TBL Sugar
- 2 Seasoning Packages from Ramen Noodles
- 4 TBL Oil
- 12 TBL Chicken Broth
- Put chicken breasts in pot and cover with water. Season with salt and your choice of herbs for additional flavor.
- Bring to Boil and then let simmer partially covered for 5-10 minutes. Remove from heat. Let poach in water for 20 minutes.
- Shred when cool
- Cook Ramen Noodles. Combine with cole slaw mix.
- Mix all other ingredients together.
- ADD Dressing. Toss. Season with S&P
- Sprinkle with sesame and almonds
- *Add more chicken broth if dry after mixing
- If Doubling, don't add another seasoning package unless needed.
