Shepherd'S Pie Sweet Potato}
- 1 tablespoon Butter clarified
- 1/2 Red Onion diced finely
- 1/2 teaspoon Salt
- 2 stalks Celery diced small
- 1/4 teaspoon Chili Powder
- 1 teaspoon Paprika
- 2 tablespoons Thyme {dry, ground}
- 1 pound Ground Beef lean
- 1 can Tomatoes diced, 14.5 oz
- 1 cup Green Beans chopped
- 2 Sweet Potatoes mashed
- 1. Heat the butter in a large skillet over medium heat. Saute the onion with the salt for 2 minutes until just translucent. Add celery, chili powder, paprika, thyme and mix well. Add the ground beef and stir to mix.
- 2. Chop the green beans and add them to the hamburg as it cooks. Add tomatoes and mix well. Cook for 3 - 4 minutes.
- 3. Peel sweet potatoes, cube and boil till tender. Add 3 tablespoons of butter and mash well.
- 4. Spread the meat mixture into an 8 by 8 inch casserole dish. Use a spatula to press down so there are no air bubbles. Spread sweet potato mash over the top, use spatula to smooth out the top.
- 5. Broil for 5 to 7 minutes until top is a nice shade of brown. Remove from oven and serve.
