Chocolate Chip Streusel Banana Coffee Cake
- For the "streusel" topping:
- 2/3 cup mini chocolate chips
- 2/3 cup dark brown sugar
- 1 1/2 tsp. cinnamon
- (walnuts or pecans would add a nice crunch here)
- For the coffee cake:
- 1 1/2 cups all-purpose flour
- 3/4 tsp. baking soda
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 2/3 cup granulated sugar
- 1 stick butter, room temp.
- 1 egg
- 1 1/3 cups bananas, mashed (about 3)
- 3 tbsps. plain non-fat yogurt
- 1. Preheat your oven to 350u0b0F. Grease and flour a 9" x 9" metal baking pan.
- 2. In a small bowl, mix together chocolate chips, brown sugar, and cinnamon (and nuts, if you're using them). Set aside.
- 3. Into a medium bowl, sift together flour, baking powder, baking soda, and salt.
- 4. In a large bowl, beat together sugar, butter, and egg using an electric mixer. Once light and fluffy, beat in mashed bananas and yogurt. When combined, add dry ingredients and mix well.
- 5. Pour about half your batter into your prepared pan. Layer about 2/3 of your streusel mixture evenly on top of batter. Add remaining batter, followed by remaining streusel.
- 6. Bake coffee cake for approximately 45-50 minutes, or until a toothpick inserted into the center of your cake comes out clean. Allow to cool completely before cutting.
