Grandma'S Jelly Donuts(Depression Days)
- 2 eggs
- 1/2 c. milk
- 1/2 tsp. vanilla
- 1/4 c. sugar
- 1/4 tsp. salt
- 1 c. all-purpose flour
- 1/2 tsp. baking powder
- 8 to 10 slices white or whole wheat day old bread
- 2 to 3 Tbsp. your favorite jam or jelly
- salad oil or shortening
- confectioners sugar
- In large bowl, combine eggs, milk, vanilla, sugar and salt. Mix until well blended.
- In a small bowl, mix flour and baking powder.
- Stir flour into egg mixture until smooth; set aside. Stack 2 slices of bread sandwich style.
- With sharp knife, remove crust from bread.
- Repeat with other breads.
- Spread thin layer of jelly or jam on each bread.
- Cut sandwich into quarters; dip doughnuts into batter.
- Fry in oil or shortening.
- After browned, sprinkle with confectioners sugar.
