Mango Oatmeal Cookies

  1. *Preheat oven to 375 degrees
  2. *Line 2 baking sheets with aluminum foil or silpat sheets
  3. *Cream the butter and sugars in a kitchen aid with paddle attachment until light and fluffy on high
  4. *Lower speed and add eggs one at a time
  5. *Add vanilla on low to prevent splashing
  6. *On med. high add the mangoes and combine until well distributed
  7. *In a separate bowl combine flour,cinnamon, baking powder and soda and add to kitchen aid.
  8. *Add oatmeal
  9. *With 2 soupspoons, drop a 3/4 spoonful onto baking sheet 2 inches apart - the cookie will be spreading and come out flat.
  10. *Bake for 20 min., switching pans from second tolower to second to upper shelf after 10 min.
  11. Bake until pale golden, not brown to create a chewy cookie.
  12. For a crisper cookie, bake until the edges are slightly brown.
