Corn Relish With Basil Vinaigrette
- Corn Relish:
- 3 cups corn kernels, cut from about 4 ears corn, or frozen corn defrosted
- 1/3 cup diced green bell peppers
- 1/3 cup diced red bell peppers
- 1/4 cup diced black olives
- 1/2 cup diced red onion
- 1/3 cup fresh basil vinaigrette
- Salt & pepper
- Basil vinaigrette:
- 1/3 cup balsamic vinegar
- 1/3 cup red wine vinegar
- 1/2 cup chopped fresh basil leaves
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh tarragon
- 2-4 teaspoons chili paste w/ garlic
- 1/2 cup olive oil
- Basil vinaigrette:
- Combine vinegars, basil, garlic, tarragon, & chili paste in food processor/blender. With machine running slowly, add the olive oil. Chill until ready to use or up to overnight. Can use the remainder of the vinaigrette as a marinade for meat.
- Corn relish:
- Combine all ingredients in a bowl. Cover & chill until ready to serve or up to 4 hours.
