Corn Relish With Basil Vinaigrette

  1. Basil vinaigrette:
  2. Combine vinegars, basil, garlic, tarragon, & chili paste in food processor/blender. With machine running slowly, add the olive oil. Chill until ready to use or up to overnight. Can use the remainder of the vinaigrette as a marinade for meat.
  3. Corn relish:
  4. Combine all ingredients in a bowl. Cover & chill until ready to serve or up to 4 hours.
