Pina Colada Jello Salad

  1. Drain pineapple, reserving juice.
  2. Dissolve gelatin in boiling water.
  3. Add cold water to reserved juice to measure 1 1/2 cups; add to dissolved gelatin.
  4. Stir in rum and coconut flavoring.
  5. Remove 1 1/2 cups of mixture; chill until slightly thickened (about 1 hour). Also chill remaining gelatin until slightly thickened (about 45 minutes); fold in pineapple.
  6. Pour into oiled 1-quart mold.
  7. Chill 5 minutes.
  8. Whip cream, gradually adding sugar, until soft peaks form.
  9. Thoroughly fold into the 1 1/2 cups slightly thickened gelatin.
  10. Pour over pineapple layer.
  11. Chill until firm.
  12. Unmold onto serving dish.
  13. Makes 6-8 servings (very generous servings).
