Crunchy Oatmeal Muffins
- 1 cup all-purpose flour
- 3/4 cup uncooked oats
- 1/4 cup unprocessed bran
- 1 tbsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 egg, beaten
- 1 cup milk
- 1/4 cup firmly packed brown sugar
- 2 tbsp salad oil
- 1/2 tsp vanilla extract
- 1/2 cup toasted chopped almonds
- Preheat oven to 400.
- Grease twelve 2.5" muffin-pan cups.
- In medium bowl, combine flour, oats, bran, baking powder, cinnamon salt and nutmeg.
- In mixer bowl, beat egg, milk, brown sugar, oil, and vanilla; add to oat mixture and stir just until dry ingredients are moistened.
- Stir in almonds.
- Spoon batter into prepared cups and bake 20 minutes or until finished.
