King Ranch Chicken
- 1 large chicken, cooked and boned or 4 lb. chicken breasts, cooked and boned
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 pkg. soft tortillas, torn in pieces
- 1 large onion, chopped
- 1/2 lb. grated American cheese
- 1 green pepper, chopped
- 1 c. chicken broth
- 1 can Ro-Tel tomatoes, drained and crushed
- Layer half of chicken, then sprinkle with chili powder.
- Next, add half of soups, tortillas, onion, pepper, cheese and chicken broth.
- Begin second layer with the second half of chicken, soups, tortillas, onion, pepper, cheese and broth.
- Spread tomatoes on top and a little cheese.
- Bake 1 hour at 350u0b0.
- Cover for 30 minutes of the baking time or dish will dry out.
