Meat Loaf Superb
- 1 lb. ground ham
- 1/2 lb. ground beef
- 1/2 lb. ground lean pork
- 2 eggs, beaten
- 1 c. quick cooking oats
- 3/4 c. tomato juice
- 1 small onion, finely chopped
- 1/4 tsp. pepper
- 4 sq. slices Mozzarella, process American or Swiss cheese, cut diagonally into triangles
- Heat oven to 350u0b0.
- Mix all ingredients except cheese.
- Shape mixture in an 8 x 4 x 3-inch loaf in ungreased rectangular 13 x 9 x 2-inch pan.
- Bake, uncovered, 1 to 1 1/4 hours or until done. Remove from oven; let stand a few minutes.
- Transfer meat loaf to ovenproof platter.
- Cut slits about 1/3 of the way through loaf at 1-inch intervals.
- Place cheese triangles long side down in each slit.
- Place loaf in oven for 2 to 3 minutes or until cheese is slightly melted.
