Spuddle Casserole
- 10 med. red potatoes
- 1/4 c. milk
- 1 bunch green onions, diced
- 1 c. (8 oz) extra sharp Cheddar cheese, grated
- 1 container (16 oz) sour cream
- 1 stick margarine
- 1/2 lg. bottle Bac*Os bacon bits
- Salt, pepper and garlic salt to taste
- Peel, cut up and boil potatoes until tender.
- Drain potatoes and whip with sour cream and milk until they are the consistency of creamy mashed potatoes.
- Saute green onions (tops, too) in the butter until they are translucent.
- Add onions, Bac*Os, 3/4 cup of the Cheddar cheese, salt, pepper and garlic salt to the potato mixture and mix well.
- Pour into a buttered 3 qt casserole dish. Sprinkle top with remaining Cheddar cheese.
- Bake at 350u0b0
- for approximately 30 min. or until bubbly.
- Serves 8 - 10.
