Old-Fashioned Chocolate Loaf Cake
- 2 c. sifted flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 oz. unsweetened chocolate
- 4 oz. semi-sweet chocolate
- 1/2 lb. unsalted butter
- 2 tsp. vanilla
- 1 1/4 c. sugar
- 5 large or extra large eggs, separated
- Preheat oven to 300u0b0.
- Need a bread loaf pan with an 8-cup capacity.
- Line or spray pan and set aside.
- Sift together flour, baking powder and salt and set aside.
- Melt chocolate in double boiler until smooth and set aside to cool slightly.
- In large bowl, cream butter.
- Add vanilla and 1 cup sugar (reserve 1/4 cup sugar).
- Beat thoroughly.
- Add egg yolks and beat well.
- Add chocolate and beat until blended.
- Add sifted dry ingredients and beat.
- Beat egg whites on moderately high speed until whites hold a soft shape.
- Fold whites into thick chocolate mixture.
- Turn mixture into prepared pan.
- Bake in preheated oven.
- Cool.
- Wrap cake in plastic wrap and let stand at room temperature overnight before serving.
