Old-Fashioned Chocolate Loaf Cake

  1. Preheat oven to 300u0b0.
  2. Need a bread loaf pan with an 8-cup capacity.
  3. Line or spray pan and set aside.
  4. Sift together flour, baking powder and salt and set aside.
  5. Melt chocolate in double boiler until smooth and set aside to cool slightly.
  6. In large bowl, cream butter.
  7. Add vanilla and 1 cup sugar (reserve 1/4 cup sugar).
  8. Beat thoroughly.
  9. Add egg yolks and beat well.
  10. Add chocolate and beat until blended.
  11. Add sifted dry ingredients and beat.
  12. Beat egg whites on moderately high speed until whites hold a soft shape.
  13. Fold whites into thick chocolate mixture.
  14. Turn mixture into prepared pan.
  15. Bake in preheated oven.
  16. Cool.
  17. Wrap cake in plastic wrap and let stand at room temperature overnight before serving.
