Barley And Corn Salad With Jalapeno And Lime Dressing
- 3 cups water
- 1 cup pearl barley, uncooked
- 1 tablespoon minced jalapeno peper
- 1/4 cup fresh lime juice
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup corn
- 1/2 cup peeled, seeded and diced cucumber
- 1/2 cup diced unpeeled tomato, remove pulp
- 1/2 cup diced green bell pepper
- 1/2 cup finely chopped purple onion
- - Bring water to a boil in a medium sauce pan; gradually stir in barley. Cover, reduce heat and simmer 40 minutes or until barley is tender and water is absorbed. Let cool.
- - Combine jalapeno pepper and next 4 ingredients and stir with a wire whisk. Combine barley, corn and next 4 ingredients in a large bowl; add dressing, tossing to coat.
