The Best Salad Ever
- 2 cups Mixed Spring Greens - washed and torn
- 4-5 Large Strawberries - hulled and sliced
- Handful Seasoned Pecans ( or plain if preferred)
- Goat Cheese (amount to taste)
- Balsamic Vinegrette
- This basic salad gets put together on the plate.
- For the Pecans: ( I find it handy to have them on hand, always, for snacking or whatever)
- 2 cups pecans tossed in a heated mixture
- of 1/2 cup water, 1 cup sugar, 1 tsp
- cinnamon,1/2 tsp salt, 1/4 tsp ground
- cloves, 1/4 tsp nutmeg, 1/8 tsp ground
- pepper.
- Stir well and let cool
- For the Dressing: (Makes 1/2 cup)
- Mix together 1 clove garlic (minced), 1
- Tbsp. red wine vinegar, 1 Tbsp. balsamic
- vinegar, 1/2 tsp salt, 1/8 tsp pepper, 3
- Tbsp. virgin olive oil, 1 Tbsp herbs such as
- thyme, basil, or oregano ( dried is fine but
- I love fresh)
