Oatmeal Carrot Cookies
- Vegetable oil spray
- 1/2 c. raisins
- Boiling water
- 1/3 c. acceptable margarine, room temperature
- 1/2 c. firmly packed brown sugar
- 1 egg
- 1 1/4 c. grated carrots
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. freshly grated lemon rind
- 1 c. whole-wheat flour
- 1/2 c. quick-cooking oatmeal
- 1 tsp. baking powder
- 1/2 tsp. vanilla
- 1 Tbsp. confectioners sugar
- Preheat oven to
- 350u0b0.
- Lightly spray a 7 1/2 x 11 1/2 x 2 inch baking pan with vegetable oil.
- Cover raisins in a small bowl with boiling water.
- Soak 15 minutes.
- Drain and set aside.
- In a large mixing bowl,
- cream together margarine and brown sugar until fluffy.
- Add egg.
- Beat well.
- Add carrots, cinnamon, nutmeg and lemon rind.
- Mix well.
- Add raisins and remaining ingredients, mixing well.
- Pour in pan and bake until done.
