Savory Italian Bread
- 3 c. flour (unbleached)
- 3/4 c. red onion, finely chopped
- 2 Tbsp. sugar
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 c. pine nuts or sunflower seeds
- 1/3 c. olive oil
- 1 c. buttermilk
- 2 eggs
- 1 Tbsp. pesto
- 3/4 c. grated zucchini
- In a large bowl, combine the flour, onion, sugar, baking powder, baking soda, salt and nuts.
- In another bowl, whisk together the olive oil, buttermilk, eggs and pesto, if desired. Stir in the zucchini and add liquid mixture to the dry ingredients.
- Stir just to moisten thoroughly.
- Spoon the batter into greased pans.
- Bake at 350u0b0 until tester comes out clean. Cool in the pans for 10 minutes, then remove to a rack to cool completely.
