Zucchini Boat

  1. Cut the zucchini in half, and remove the seeds (discard)
  2. remove about a 1/2 inch little of the flesh form the inside and dice it up.
  3. Dice up the onions, peppers, hot pepper
  4. Take all the Ingredients and saute them for about 10 to 15 min.
  5. Remove from the pan and set aside.
  6. Saute the mushrooms seperatly until lightly brown 5 to 6 min.
  7. Mix all ingrendants together and let it rest for about 10 min.
  8. While mixing add your herbs at this time.
  9. You will need a roasting pan 10 x 18 or larger. Put about 2 cups of water, chicken or vegatable stock in the pan.
  10. Place the zucchini into the pan face up.
  11. In your veg blend add the italian bread crumbs and mix. If you need more add a little at a time until it looks like a light sand mixture.
  12. Inside of the halfed zucchini drizzle a little olive oil in it.
  13. Put in the veg mixture into the boats and bake it in a oven of 350 degrees and cover pan with foil.
  14. Bake for about 45 min. Check on the boats to see if the flesh is softening up. When this happens your boats are almot done.
  15. For the last 10 min you can add a little more bread crumbs on top of the boats and add a little italian cheese of your choice.
  16. Let the cheese melt and turn a little brown.
  17. Take out of the oven and let it stand for a few minutes
  18. You should have made your rice.
  19. I cut the boat in about 2 inch sections.
  20. On a dinner plate put a generous helping on brown rice and place the 2 inch section of the boat on top of the rice.
  21. Take the left over stock and drizzle it on top of the rice and boat.
