Eggnog Pops
- 6 tablespoons vanilla custard powder
- 4 cups eggnog (if out of season, use milk)
- 1/2 cup sugar
- 3 teaspoons rum extract
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon cinnamon, plus a few pinches for sprinkling
- 3/4 cup heavy cream
- 1) In a saucepan, combine: powder, eggnog, sugar and stir over medium-low heat until powder & sugar are dissolved. Pour into a bowl/pitcher.
- 2) Whisk in rum & vanilla extracts, nutmeg, and 1/2 teaspoon cinnamon
- 3) Whip cream until it STARTS to thicken 1-2 minutes. Fold cream into eggnog mixture to create marble patterns.
- 4) Pour into pop molds, insert sticks, freeze 8 hours.
- 5) Remove from freezer, let stand 5 minutes before removing from mold; sprinkle additional cinnamon.
