Salvadoran Quesadilla

  1. Instructions: Preheat the oven to 350u0b0. Lightly coat a round, nonstick cake pan with cooking spray. If you don't have a nonstick pan, line the pan with wax or parchment paper.
  2. Mix eggs, sour cream and butter in a medium bowl. In a separate bowl, combine the Bisquick, sugar, baking powder and cheese.
  3. Slowly mix the dry ingredients into the wet ingredients, half a cup at a time. It should be the consistency of a heavy pancake batter. (If the dough is too thick, add milk. But if done correctly, no milk will be needed and the cake will be lighter and more springy.)
  4. Pour batter into cake pan. Combine the sesame seeds and sprinkle over the top. Bake for 25 minutes or until toothpick inserted comes out clean. Remove, let cool and serve at room temperature.
  5. Per serving: 370 calories, 10 g protein, 44 g carbohydrate, 18 g fat (11 g saturated), 96 mg cholesterol, 505 mg sodium, 2 g fiber.
