California Avocado Citrus Salad
- 1 lemon, juiced
- 1 navel orange, juiced
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon salt
- 1 teaspoon black pepper
- 2 navel oranges, sectioned
- 1 grapefruit, sectioned
- 1 avocado, diced
- 1/2 lb mixed baby field greens
- 1/2 cup dried cranberries
- 1 cup walnuts, toasted and chopped
- 1 cup blue cheese, crumbled
- Juice the lemon and orange. Gradually whisk in the honey and Dijon mustard. Mix in olive oil, and season with salt and pepper. Set dressing aside to chill.
- Section the oranges and grapefruit and cut into small wedges. Dice the avocado. In a large salad bowl, toss the baby greens with the cranberries and above ingredients. Drizzle the dressing, and sprinkle with walnuts and blue cheese. Serve chilled.
