Cauliflower Cheese Casserole

  1. Preheat oven to 375 deg F. Spray 8 X 8 baking dish with vegetable oil spray.
  2. Steam cauliflower until crisp-tender. Pat dry and transfer to baking dish.
  3. Bring cream to simmer in saucepan and then whisk in the cream cheese and mustard, stirring continuously until smooth. Stir in 1-1/2 C of cheese, salt, pepper, and garlic powder until cheese melts, about 2 min. Remove and pour over cauliflower.
  4. Top with remaining 1/2 C cheese. Bake until brown and bubbly; about 15-20 min.
