Cauliflower Cheese Casserole
- Kosher salt, as needed, plus 1/2 teaspoon
- Vegetable oil spray
- 1 large head cauliflower, cut into small florets
- 3/4 cup heavy cream
- 2 ounces cream cheese, cut into small pieces
- 11/2 teaspoons Dijon mustard
- 11/2 cups shredded sharp Cheddar cheese, plus 1/2 cup for topping the casserole
- 1/4 teaspoon black pepper
- 1/8 teaspoon garlic powder
- Preheat oven to 375 deg F. Spray 8 X 8 baking dish with vegetable oil spray.
- Steam cauliflower until crisp-tender. Pat dry and transfer to baking dish.
- Bring cream to simmer in saucepan and then whisk in the cream cheese and mustard, stirring continuously until smooth. Stir in 1-1/2 C of cheese, salt, pepper, and garlic powder until cheese melts, about 2 min. Remove and pour over cauliflower.
- Top with remaining 1/2 C cheese. Bake until brown and bubbly; about 15-20 min.
