Smoked Chicken Salad With Grapes, Pecans, Celery, Etc.
- 2 lbs skinned and deboned smoked chicken meat.
- 1 large pink lady apple medium chop unpeeled
- 1/3 large red onion fine chop
- 2 stalks celery medium chop
- 1/2 pound seedless green grapes chopped or cut in half.
- 3/4 cup of toasted pecans-chopped
- Dressing:
- 1/2 cup light mayo
- 1/2 cup light sour cream
- 1/4 cup fresh oregano-chopped fine
- 2 oz. fresh lemon juice
- 4 oz. white wine vinegar
- fresh ground salt and pepper as needed
- mix dressing ingredients and let meld while mixing other in a seperate bowl then combine dressing with other ingredients, cover, and refrigerate at least two hours before serving Yumulious!!
