Mandarin Salad
- 1/2 c. sliced almonds
- 3 Tbsp. sugar
- 1/2 tsp. salt
- dash of pepper
- 1/4 c. oil
- 2 Tbsp. chopped parsley
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- 1/8 tsp. Tabasco sauce
- 1/2 head iceberg lettuce
- 1/2 head Romaine lettuce
- 1 c. chopped celery
- 2 green onions
- 11 oz. can mandarin oranges, drained
- Combine almonds and 3 tablespoons sugar in saucepan.
- Cook over medium heat until almonds are coated and sugar is dissolved, stirring constantly.
- Cool and store in an airtight container, if desired.
- Combine sugar, parsley, oil, vinegar and Tabasco sauce in bowl.
- Mix well.
- Chill several hours.
- Combine lettuce, celery, onions and mandarin oranges in bowl.
- Add chilled dressing.
- Toss.
- Sprinkle with almonds.
